Shrimp brochettes

Ingredients:

• 600g (1lb 5⅛ oz) shrimp
• 2 tbsp chopped parsley
• 2 tbsp chopped chervil
• 3 cloves garlic
• 2 tbsp chopped fresh coriander
• a pinch of rosemary
• 2 sage leaves
• 4 limes or lemons
• 2 tbsp pastis
• 4 tbsp extra virgin olive oil
• salt and pepper
• 4 brochette sticks

Preparation:

Press the juice of 3 limes. Cut the fourth in half and cut it into slices for the garnish. For the marinade, combine 4 tbsp extra virgin olive oil in a bowl with a generous grind of fresh pepper, a dash of salt, chervil, sage, rosemary, fresh coriander, lime juice, crushed garlic and the Pastis. Lightly oil the skewers and thread the shrimp onto them. Pour the marinade over the brochettes and let them marinate at least two hours in the refrigerator, turning and basting occasionally. Grill the brochettes for a few minutes on each side using the Princess Table Chef™, basting during the last minute of cooking with the remaining marinade. Serve with a crisp salad dressed with a vinaigrette made of olive oil, salt, pepper, juice from half a lemon, and a generous spoonful of Pastis. Serve with a chunk of French bread and there you have it. Easy, healthy and delicious.
