Baked pear

Ingredients:

• 4 pears (Doyenne de comiste)
• 25g (⅞ oz) butter
• 100g (3½ oz) sugar
• 1 box of blueberries
• 1 glass of white wine
• 1 cinnamon stick
• 1 lemon slice
• 50g (1¾ oz) soaked raisins
• 1 glass pear juice

Preparation:

Melt 25g (⅞ oz) (about 1oz) butter into a pan that is not too big. Add 50g (1¾ oz) of sugar and stir well with a wooden spatula on a low flame. Then add the white wine and pear juice. Bring to the boil. Complete the sauce with the raisins, the cinnamon and the slice of lemon. Now just skim off the foam, and the sauce is ready. Peel and core 4 pears. Cut the pears lengthwise in thick slices. Grease the Table Chef with butter and heat to 195°. Now quickly brown the pear on both sides. Finally, do the caramel trick by nonchalantly sprinkling the pear with the rest of the sugar. Serve the pears warm, and enjoy your dessert!
