Pineapple

Ingredients:

• 1 pineapple
• 2 vanilla beans
• 4 rosemary sprigs
• 4 cinnamon sticks
• 100g (3½ oz) butter
• 2 tbsp honey (50g/1¾ oz butter for those who appreciate it)
• 500g (1lb 1⅔ oz) sugar
• 100ml (3⅓ fl. oz) whipped cream

Preparation:

Pineapple
Remove the skin of the pineapple and cut the flesh into 12 pieces. Cut away the hard core. Halve the vanilla pods lengthwise and then widthwise. Cut each rosemary sprig into three pieces. Pierce each pineapple piece with a vanilla stick, rosemary sprig and cinnamon stick diagonally into the flesh. Fry the pineapple pieces on the Princess Table Chef for approx. 15 minutes. During frying, divide and scoop the sugar and honey over the pineapple. Add a knob of butter during cooking if so wished.

Caramel sauce
Put the sugar in a saucepan and add a little water until the sugar has dissolved. Bring to the boil. Do not stir the sugar, this will prevent lumps. Only stir in the cream when the sugar has turned brown (tea). Please note: HOT! Briefly cook the caramel sauce. Remove the saucepan from the heat.

Serving
Divide the caramel sauce among the plates. The sauce can be used either hot or cold. Place 3 pineapple pieces in the sauce per person. Serve with vanilla or cinnamon ice cream.
