Fresh sausage

Ingredients:

• 1kg (2lb 3oz) puréeing potatoes
• salt
• 500g (1lb 1⅔ oz) French beans (fresh or frozen)
• a large sausage per person
• a large lump of butter
• salt and pepper
• a large pot of white beans (350g/12oz)
• milk

Preparation:

Peel the puréeing potatoes, wash and cut into pieces. Boil the potatoes and the French beans together in a little water with a pinch of salt. Fifteen minutes will be more than sufficient. Meanwhile, fry the sausages. Do not forget to prick them in advance to prevent rupture.
Rinse the beans and drain well. Drain the potatoes and French beans and mash them. Do not forget to add a generous knob of butter and a splash of milk. Season the purée to taste with salt and pepper and oil from the sausages. Gently stir in the white beans. Share out the stamppot across the plates and place the sausage on top. Peasant cuisine, but incredibly delicious!
