Stir-fried pak choi

Ingredients:

• 1kg (2lb 3oz) pak choi
• 25g (⅞ oz) dried shrimp
• oil
• 1 spring onion
• 1 fresh ginger root

Preparation:

Rinse the dried shrimp, and soak in boiling water for half an hour. Then pour away the soaking water. Clean the pak choi and cut it into chunks of about 1cm. Chop the spring onion into small pieces and keep the green and white parts separate. Put a little vegetable oil in a wok or a heavy cast iron kettle. When the oil begins to smoke, add the white of the spring onion and briefly stir-fry it.
