Hong Kong Chicken

Ingredients:

• 600g (1lb 5⅛ oz) chicken breast thinly sliced into strips
• 4 cloves garlic
• 3 finely-chopped shallots
• 1 finely-chopped and seeded red or green chilli
• 5cm finely-chopped ginger
• 6 tbsp oil (preferably peanut oil)
• 1-2 tbsp rice vinegar (you can also use sherry)
• 4-5 tbsp dark Chinese soy sauce

Preparation:

Heat the oil in the wok and stir-fry the chicken quickly over a high heat for 1 minute. Then remove from the pan and set aside. Stir-fry the chilli, garlic, ginger, shallot and cloves half a minute and then add the chicken back in. Season the dish with the rice vinegar, soy sauce and a pinch of pepper. Stir well for another half minute and serve with noodles or rice.
